SALAD OF SALTED CRAB

A very simple dish that utilises  rice paddy crabs that have been salted. These must be well washed, rinsed and have boiling water poured over them, or alternatively blanch them briefly. The dressing is relatively simple as all of the ingredients give the dish a wonderful balance, the green mango gives sourness and the crabs add saltiness. Sweetness comes from the palm sugar and the coconut cream give the dish a rich finish.

 

Ingredients:

Salted rice paddy crabs

Plain water

Boiling water

 

Freshly grated coconut

Warm water

 

Shallots

Green mango

 

Palm sugar

Lime juice

Fresh chilies

Coconut cream
